Instructions
 

  • Preheat oven to 425 degrees F.
  • Place the cooked spinach in a kitchen towel and squeeze out of the excess moisture.
  • Add the squeezed spinach, cooked cauliflower rice, feta cheese, lemon juice, butter, salt, pepper and dill to a small greased casserole dish.
  • Give everything a good stir to combine, then bake at 350 for 20 minutes. (Rather than baking you could simply microwave this until the butter is melted and the cheese is warm, about 3-5 minutes.)
  • After baking, give everything one final stir and serve.

Notes

Hint: This dish can be prepped ahead without baking, then covered and refrigerated for up to 3 days and baked just prior to serving.
