    This easy 30-minute Mediterranean Hummus Bowl is full of bright flavors as well as nutritious vegetables making this a healthy and delicious meal.

    This Mediterranean Hummus Bowl recipe is inspired by light and fresh Mediterranean flavors. To keep things quick and easy, purchase readily available store-bought hummus for this bowl, or you can make your own homemade hummus. I also like to buy prepared cauliflower rice to keep things easy for this bowl, but you can make your own cauliflower rice if you prefer. This Hummus Bowl is delicious, and nutritious and can be made on the busiest of weeknights when you take a little help from the store-bought hummus and cauliflower rice. This bowl is also gluten-free, grain-free and dairy-free as is and can easily be made vegetarian or vegan following the adjustments below.

    Bowl meals are my favorite dinner meals to serve to guests because you can set up a bar with all of the ingredients and let everyone assemble their own bowl to easily accommodate a variety of dietary restrictions and picky eaters.     Ingredients

    Here's what you need to make a Mediterranean Hummus Bowl:

    Seasoned Beef

    Ground beef, tomato sauce, apple cider vinegar, olive oil and spices.

    • chili powder
    • smoked paprika
    • cumin
    • salt
    • black pepper
    • garlic powder

    Base and Toppings

    A bag of cauliflower rice, tub of hummus, halved grape tomatoes, sliced red onions, banana peppers, kalamata olives and diced cucumbers.

    Instructions

    Here's how to make a Mediterranean Hummus Bowl:

    A skillet with olive oil and raw ground beef.

    Add the olive oil and ground beef to a large skillet over medium heat.

    Cook the beef, breaking it up with a wooden spoon, until the meat is cooked through, about 10 minutes. Drain off the extra fat.

    Add the tomato sauce, apple cider vinegar, smoked paprika, chili powder, cumin, garlic powder, salt and pepper to the pan. Give everything a good stir and simmer for an additional 5-10 minutes to let the flavors combine.

    To build a Hummus Bowl, layer the cooked cauliflower rice on the bottom of a bowl, then arrange the cooked seasoned beef, prepared hummus and toppings on top of the rice and serve immediately.

    Hint: To serve, set up a bar for guests to build their own bowls using any combination of the following ingredients: arugula or chopped romaine, rice, cauliflower rice, hummus, feta cheese, kalamata olives, chickpeas, banana peppers, hot sauce, cherry tomatoes, diced cucumbers, sliced red onion, diced bell peppers, roasted red peppers, sundried tomatoes, artichoke hearts or fresh herbs such as parsley, dill or oregano.

    Substitutions

    Want to substitute an ingredient in a Mediterranean Hummus Bowl? Here's how:

    • Cauliflower rice - use cooked rice, brown rice or quinoa in place of the cauliflower rice.
    • Ground beef - use an equal amount of ground turkey, ground chicken or ground pork in place of the ground beef.
    • Tomato sauce - use an equal amount of crushed tomatoes instead of the tomato sauce.
    • Olive oil - use an equal amount of a different neutral oil such as canola oil or avocado oil.
    • Apple cider vinegar - use an equal amount of a different vinegar such as white distilled vinegar or red wine vinegar.
    • The spices - use a package of taco seasoning in place of the smoked paprika, chili powder, cumin, garlic powder, salt and black pepper.
    • Hummus - use any hummus you like for this bowl, I particularly like these varieties of store-bought hummus for an easy meal: roasted red pepper hummus, garlic hummus or jalapeno hummus. Or, you can make homemade hummus, if you prefer. If desired, substitute Tzatziki Sauce or Yogurt Dill Sauce for the hummus.

    Variations

    Try one of these variations of a Mediterranean Hummus Bowl:

    • Spicy - add ¼-1/2 teaspoon of cayenne pepper for spicy seasoned ground beef.
    • Deluxe - add feta cheese and or Tzatziki Sauce to your bowl and sprinkle some fresh lemon juice or a little Greek dressing over top of everything.
    • Vegan - omit the seasoned beef for a vegan or vegetarian hummus bowl.
    • Low-carb/ keto - use cauliflower hummus or lupini dip in place of hummus made with chickpeas.

    Storage

    Store leftover Mediterranean Hummus Bowl ingredients in separate airtight containers in the fridge for up to 4 days. The cooked beef can also be stored in the freezer for up to 6 months. (Check out this article for more details on how to properly freeze and thaw cooked meat.)

    Top tip

    This Mediterranean Hummus Bowl is great for meal prep, store the cauliflower rice and seasoned meat in one container that can be heated up and the remaining ingredients in a different container, adding them once the meat and cauliflower rice have been warmed.

        There's a James Beard award-winning Israeli restaurant in New Orleans that serves a lamb hummus I love and I modeled this after that spiced lamb. Tomato sauce can often be found in various Mediterranean dishes such as Moussaka.
